I went shopping today to get stuff for dinner tonight.  As you can tell, I went a little overboard.  Which is a common occurrence when you go shopping when you are hungry.

My oldest son Thomas went with me and together we shopped it up! I had to literally talk him into getting salmon for a dinner(for some night).  I didn't realize, that it would be this very night.  My bad.

I have only cooked salmon one other time in my life and that was almost 10 years ago.  I was freaked.  So, what did I do?  I went to social media to help me.  Mainly, Facebook.  Facebook to the rescue!

Thank goodness for great facebook friends.  I post random stuff on there all the time and hardly any one "Likes" or comments on my posts.  Not so, with a food request.  By the end, I had about 40 comments with suggestions and whatnot.

Thank you all Facebook buddies!!  I used one of their recipes with a few twists of my own, to make the best salmon ever! Turns out, it's not that hard to make...with a few tips from friends.

I first covered my salmon with salt, pepper, garlic salt.  Then I moved on to garlic infused(and lemon infused) extra virgin olive oil.  I put that on a bit liberally.  Then I added fresh cut up sweet onions and fresh lemon slices.

Viola! After you cook it at 350 for about 40 minutes, you get yummy deliciousness!  Although, I found out later, that you can cook it at a higher temp(for shorter) and it turns out great too!

But we were happy with the way this turned out.  We ate every last drop of the 2lbs. of salmon and we are looking forward to eating it again in the near future!  Thank you again to everyone that helped to make it so!
